St Eustachius is fortunate to have a thirty voice robed choir representing every generation of the church community. The choir performs a wide range of repertoire including music for festivals, choral evensongs and special events, both in the parish church and beyond. A particular highlight is the annual Service of Nine Lessons and Carols that attracts a capacity congregation.
St Eustachius has a fine Walker pipe organ and Steinway grand piano and both are used to maximum effect to enhance worship.

Two CDs have been recorded. A CD of choral music in 2001 and a CD of organ music in 2006, recorded shortly after the refurbishment of the organ.
The church is a popular concert venue that regularly attracts ensembles of high calibre including the Dante Quartet, the Exon Singers, the Ten Tors Orchestra, the South West Chamber Choir and the Chamber Ensemble of London. A series of free lunchtime concerts, especially those as part of the annual Tavistock Festival, is appealing to an ever increasing audience.
